Strawberry Mess Cupcakes

  • 180 C°, 350 F°, Gas Mark 4


For the Cupcakes
  • 225g unsalted butter
  • 225g caster sugar
  • 3 large eggs
  • 225g self-raising flour
  • 100ml single cream
  • 135g strawberries, mashed
  • 1 tsp vanilla extract
For the Topping
  • 1 pint Double Cream
  • 1 Cup Icing Sugar
  • 1 tsp Vanilla Extract
  • Red food colouring (optional)
  • Crushed Meringue
  • Red sprinkles


For the Cupcakes
  1. Mix butter and sugar together
  2. Mix in the eggs one at a time
  3. Mix in all of the cream
  4. Fold in the flour
  5. Mash the strawberries and mix with the vanilla extract
  6. Combine the strawberry mix with the cake mixture
  7. Divide equally between cases and bake for 15-20mins
For the Topping
  1. Beat the cream until thick
  2. Add the icing sugar and vanilla (you can add a little red or pink food colouring to make them extra special)
  3. Pipe or spread the icing on the cakes
  4. Sprinkle with crushed meringue and red sprinkles
