Sweet and Sour Chicken

This Sweet and Sour Chicken recipe is crispy, tangy and packed with flavour!
Ingredients
For the Chicken:
- 2 chicken breasts, cut into bite-sized pieces
- ½ cup cornstarch
- ½ cup all-purpose flour
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder
- 1 egg
- ¼ cup water
- 1 tbsp soy sauce
- Oil for frying
For the Sweet & Sour Sauce:
- ½ cup ketchup
- ¼ cup rice vinegar (or white vinegar)
- ¼ cup brown sugar
- 2 tbsp soy sauce
- 1 tbsp cornstarch mixed with 2 tbsp water
- ½ cup pineapple juice (or water)
- ½ cup diced pineapple (optional)
- ½ cup bell peppers, chopped (any colour)
- ½ cup onion, chopped
Method
1. Prepare the Chicken:
- In a bowl, mix cornstarch, flour, salt, black pepper and garlic powder.
- In another bowl, whisk egg, water and soy sauce.
- Dip chicken pieces into the wet mixture, then coat in the dry flour mixture.
- Heat oil in a deep pan (350°F/175°C) and fry the chicken until golden and crispy (about 4–5 minutes). Drain on paper towels.
2. Make the Sauce:
- In a pan, mix ketchup, vinegar, brown sugar, soy sauce and pineapple juice. Bring to a simmer.
- Add bell peppers, onion and pineapple. Cook for 2–3 minutes.
- Stir in the cornstarch slurry and cook until the sauce thickens.
3. Combine & Serve:
- Add the crispy chicken to the sauce, toss to coat evenly.
- Serve hot over steamed rice or with noodles. Enjoy!
