Classic Vegetable Soup

Ingredients
3 tablespoons olive oil
1 onion, diced
2 carrots, diced
1 potato, chopped
2 celery stalks, chopped
3 cloves garlic
1 can 400g chopped tomatoes
600ml Veg stock
1 teaspoon dried thyme
1 teaspoon dried oregano
½ tsp chilli flakes ( optional)
1Teaspoon Worcester sauce
1 bay leaf
Salt and pepper to taste
fresh parsley, chopped
Method
- Heat the olive oil in a large pot over medium heat. Add the diced onion, carrots, potato and celery. Cook for about 5 minutes until the vegetables are softened.
- Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Stir in the tomatoes, vegetable stock, thyme, oregano, chilli flakes, bay leaf, salt, and pepper. Bring the soup to a boil.
- Reduce the heat to low, cover the pot, and simmer for about 15-20 minutes until the vegetables are tender.
- Add the fresh parsley.
- Taste and adjust the seasoning as needed. Remove the bay leaf before serving.
Serve the vegetable soup hot, optionally garnished with additional fresh parsley. You can also add a squeeze of lemon juice for extra flavour.
