Ingredients

8 slices of bread (preferably brioche)

4 large eggs

125 mls milk

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

4oz sliced strawberries

4 oz cream cheese, softened

2 tablespoons icing sugar

Butter for cooking

Maple syrup for serving

Fresh mint leaves for garnish (optional)

Method

In a mixing bowl, beat together eggs, milk, vanilla extract, and ground cinnamon until well combined. Set aside.

In another bowl, mix softened cream cheese and icing sugar until smooth.

Spread the cream cheese mixture onto 4 slices of bread. Top each with a layer of sliced strawberries, then cover with the remaining 4 slices of bread to make sandwiches.

Heat a skillet or griddle over medium heat and melt some butter.

Dip each sandwich into the egg mixture, coating both sides evenly.

Place the dipped sandwiches onto the skillet or griddle and cook until golden brown on both sides, about 3-4 minutes per side.

Once cooked, remove the French toast from the skillet and transfer to serving plates.

Serve hot with a drizzle of maple syrup and garnish with fresh mint leaves if desired.

This recipe is simple enough to make, but the combination of creamy cheese, sweet strawberries, and warm French toast is sure to make Mother’s Day breakfast memorable!
