Chocolate Pancakes

- 140 C°, 275 F°, Gas Mark 1
Ingredients
- 1 cup Milk
- 1 Egg
- 2 tbsp Melted Butter or Margarine
- 1 cup Plain Flour
- 1/3 cup Cocoa Powder
- 1/4 cup Caster Sugar
- 1/2 tsp Salt
- 1/2 tsp Baking Soda
- Toppings of your choice
Method
- Mix together the milk, eggs and butter
- In a separate bowl mix the flour, cocoa powder, sugar, salt and baking powder
- Combine the wet mix with the dry ingredients and mix until any lumps have gone
- Heat a griddle or frying pan (I use a little lard but you can use a drizzle of water.
- Pour mixture (about 1/4 cup for each pancake) and cook for 1-2 mins until batter has set around the edge
- Flip over and again cook for 1-2 mins
- Repeat until all mixture has been used
- Serve as desired – a sprinkle of icing sugar, ice-cream, chocolate sauce, with raspberries and raspberry coulis! (as a very special treat I leave a few toppings in bowls on the table for the kids to choose!)
