Ingredients
For the cupcakes
- 120g plain flour
- 45g cocoa powder
- 150g caster sugar
- ½ tsp bicarbonate of soda
- ½ tsp baking powder
- Pinch of salt
- 2 medium eggs
- 120ml whole milk
- 60ml vegetable oil
- 1 tsp vanilla extract
- 120ml hot coffee or boiling water
- 10–12 Oreo biscuits, roughly crushed
For the Oreo buttercream
- 115g unsalted butter, softened
- 240g icing sugar
- 2–3 tbsp milk
- 1 tsp vanilla extract
- 6–8 Oreos, finely crushed
Method
- Prep
- Heat oven to 180°C (160°C fan) / Gas Mark 4.
- Line a 12-hole muffin tin with cupcake cases.
- Make the batter
- In a large bowl, whisk together:
- flour
- cocoa powder
- caster sugar
- bicarbonate of soda
- baking powder
- salt
- Add eggs, milk, oil, and vanilla. Mix until smooth.
- Pour in the hot coffee/water and stir carefully.
- Fold in the crushed Oreos.
- Bake
- Fill cupcake cases about ⅔ full.
- Bake for 18–20 minutes.
- Cool completely before frosting.
- Make the buttercream
- Beat butter until pale and fluffy.
- Gradually beat in icing sugar.
- Add vanilla and milk until smooth.
- Stir in finely crushed Oreos.
- Decorate
- Pipe or spread frosting onto cupcakes.
- Top with Oreo halves.
