Winter Veggie Traybake

Family Meals

A traybake to warm up winter days

Easy, colourful and just right for little kitchen helpers

When it’s cold outside and everyone’s hungry after school, a one-pan tea can be a lifesaver. This colourful winter veggie traybake is simple to prepare, easy to adapt to whatever’s in the fridge, and gives children a chance to get involved with making dinner.

Ingredients

  • 2 carrots
  • 2 parsnips
  • 1 red onion
  • 2 medium potatoes
  • 1 red pepper
  • 2 tbsp olive oil
  • 1 tsp dried mixed herbs
  • Black pepper, to taste
  • Grated cheddar cheese, optional

Method

  1. Get ready: Heat the oven to 200°C (180°C fan). Line a large roasting tray with baking paper.
  2. Chop and mix: With an adult handling the sharp knife, chop the vegetables into similar-sized chunks. Children can help wash the veg, measure the oil and herbs, and mix everything together in a bowl.
  3. Into the oven: Spread the vegetables across the tray in a single layer. Roast for 30 to 40 minutes, turning halfway through, until golden and tender.
  4. Make it your own: Sprinkle over a little grated cheddar for the final five minutes, if you fancy it.

Serve warm on its own or alongside your family’s favourites.

Top tip: Swap in sweet potato, butternut squash or whatever vegetables need using up. A handy way to make a chilly evening feel a little cosier, without creating a mountain of washing-up.
