Banana and Walnut Loaf

Ingredients

  • 7oz Plain Flour
  • 1 level tsp Baking Powder
  • 1/2 tsp Bicarbonate of Soda
  • 4oz Caster Sugar
  • 2oz Margarine
  • 1 Egg
  • A little bit of Milk
  • 2 or 3 Mashed Bananas
  • 2 Handfuls of Chopped Walnuts

Method

  1. Sieve the flour, bicarbonate of soda and baking powder
  2. Rub in the margarine and sugar
  3. Add the bananas and walnuts
  4. Beat in the egg and milk
  5. Mix well
  6. Pour into a lined loaf tin
  7. Cook until knife comes out clean (about 1 hour)
  8. Slice and enjoy with or without butter on.
