.180 C°, 350 F°, Gas Mark 4

Ingredients

  • 350g/12 oz plain flour
  • 1 tsp bicarbonate of soda
  • 2 tsp ground ginger
  • 1/2 tsp salt (half)
  • 100g (4 oz) butter
  • 175g (6 oz) soft brown sugar
  • 1 egg
  • 4 tbsp golden syrup
  • different coloured fruit flavoured boiled sweets
  • White Icing
  • 100g Royal Icing
  • 6 tsp water
  • Or use White Writing Icing
  • narrow ribbon

Method

  1. Pre-heat the oven to 180C/350F/Gas 4.
  2. Mix the flour, bicarbonate of soda, ginger and salt into a bowl.
  3. Rub in the butter until the mixture resembles fine breadcrumbs, then stir in the sugar.
  4. Beat together the egg and golden syrup and mix into the flour mixture to make a smooth dough, kneading lightly with your hands.
  5. Crush the sweets in their wrappers using a rolling pin.
  6. Sprinkle flour on a clean work surface and roll out the dough until about 1/2cm (1/4in) thick, then cut into shapes using a selection of Christmas Cookie cutters.
  7. Transfer to lined baking sheets.
  8. Cut out shapes in the centre of each biscuit, making sure you leave a good edge all around the biscuit.
  9. Completely fill the hole in each biscuit with crushed boiled sweets.
  10. Make a hole at the top of each biscuit using a drinking straw so that you will be able to thread a ribbon through it later.
  11. Bake for 12 minutes until golden.
  12. While the biscuits are still warm, check the holes are still there, otherwise push a straw through again.
  13. Do not remove the biscuits from the baking tray until they have cooled as the boiled sweets need to harden.
  14. Once the sweets have hardened, gently lift the biscuits onto a wire rack with a palette knife to finish cooling.
  15. You can decorate the biscuits with piped white icing .Mix the Royal Icing together with the water to get a good consistency and use this to ice the cookies . Alternativly use white Writing icing - which you can buy in a tube in the supermarket.
  16. Thread ribbons through the holes to make loops for hanging.

Cranberry and White Chocolate Cookies

Instead of giving baked cookies as a gift for Christmas, why not give the recipe for one of your favourite cookies and then layer all the ingredients in a glass jar and tie a ribbon around it. All of the ingredients for these cookies are in the jar apart from the butter and they are very quick and easy to make.

Chicken Caesar Salad

A tasty recipe to make lunch boxes more interesting for your little ones! The croutons and dressing for this salad can be made the night before.  All you need to do in the morning is mix up the ingredients and toss with the dressing.  You can even use ready made croutons.

Chocolate Christmas Trees

Beefy Sausage Roll

Sausage rolls make great picnic and party finger foods as they are ready-wrapped in pastry. To add a slight twist I like to use beef, but minced pork would also be good.
