Cod with Salsa
20minutes cooking time
- 4 x 125 g (41â2 oz) cod fillets, skinned
- olive oil, for brushing
- salt and pepper
- 50 g (2 oz) white breadcrumbs
- 1 tablespoon snipped chives
- 1â4 teaspoon lemon zest
- 25 g (1 oz) Parmesan cheese, grated
- Paprika, for topping
- 2 tomatoes, deseeded and diced
- 2 spring onions, sliced
- 1 tablespoon chopped chives
- 1 tablespoon chopped basil
- 1 tablespoon rice wine vinegar
- 2 tablespoons olive oil
- a pinch of sugar

Porridge with Apple, Pear and Apricot Baby Puree
This makes a nutritious breakfast. Make up portions of the fruit puree and freezes. Then you can thaw them overnight, ready to mix with your baby porridge in the morning. As your baby gets older you can simply stir in rather than puree.
Beefy Sausage Roll
Sausage rolls make great picnic and party finger foods as they are ready-wrapped in pastry. To add a slight twist I like to use beef, but minced pork would also be good.
Apple and Sultana Muffins
These deliciously moist muffins are very easy to make and will keep well for up to five days. They are good for breakfast and can be eaten on the way to school if your child is in a rush.
