Ingredients

€¢ 300g farfalle pasta
€¢ 1 tbsp olive oil
€¢ 4 spring onions (diced)
€¢ 200g Salmon (diced)
€¢ 100g frozen peas
€¢ 1 bunch asparagus (chopped)
€¢ 50g parmesan, grated
ۢ 200g Cr̬me Fraiche
€¢ Zest and juice of 1 lemon
€¢ Salt and Pepper
€¢ Parsley to serve

Method

1. Bring a pan of salted water to the boil. Add the pasta and cook as per packet instructions. Add the peas and asparagus for the last 3 minutes of cooking.
2. Heat the olive oil in a deep frying pan over a medium heat.
3. Add the shallots and sauté for 1 minute.
4. Add the salmon and cook until golden, around 2 minutes per side.
5. Drain the pasta and veg and add to the salmon. (do not let the pasta dry, some moisture from the pasta water will make the sauce silky)
6. Stir in the crème fraiche.
7. Add the parmesan and stir to combine and melt.
8. Add the lemon zest, a squeeze of lemon juice and season to taste.
9. Garnish with parsley and serve.
